Title: Smoked Salmon Stuffed Tomatoes

8mdSized tomatoes
2 Shallots
1 Spanish onion
1/2lbSmoked Salmon
1bnFresh dill
2cFresh bread crumbs
1 Lemon
1tbLight cream
1 Tot pepper sauce
1bnWatercress, to serve

Preheat oven to 350 degrees. Cut off tops of tomatoes. Scoop out the insides, throw away core and seeds. Place tomato pulp in a bowl. Chop the shallots and the onion finely and mix with the tomato pulp.

Puree the smoked salmon and add to the bowl. Chop the dill finely, place in the bowl with the smoked salmon and all the remaining ingredients. Mix well.

Spoon the mixture back into the tomatoes, put the tomato tops on and bake for about 20 minutes.

Serve on a bed of watercress. These are good hot or cold.
